Looking for a quick midweek meal? This Asian salmon salad is for you. A quick marinade in the morning and you have a complete meal before lunch.
The marinade has a soy sauce base, a little lime juice, some seasonings and you're done. But the best part of this salad is the dressing.
This dressing is seriously drinkable. I mean literally. We kept pouring it over every bite. My surprise ingredient—pickled ginger! You will not believe how good it is. And if you can't easily get pickled ginger, you can substitute a little bit of fresh ginger. Just don't add too much, a tablespoon should do it.
