A superb blend of creamy Mexican flavors with loads of black beans and corn make this chipotle shrimp corn chowder a real crowd pleaser.

Ingredients

  • 1 lb shrimp peeled and deveined
  • 1 1/2 c cilantro
  • 1 chipotle pepper
  • 2 1/2 tsp kosher salt
  • 5 tbsp lime juice
  • 1 tsp lime zest
  • 2 garlic cloves
  • 3 tbsp olive oil
  • 4 garlic cloves minced
  • 1 red onion diced
  • 1 red pepper diced
  • 2 c frozen corn defrosted
  • 15 oz can black beans drained and rinsed
  • 7 oz can green chiles
  • 4 scallions sliced; white only
  • 4 c water
  • 1 c flavored stock see notes
  • 2 c half and half
  • 8 oz cream cheese room temp
  • 4 oz Monterey Jack cheese shredded
  • 1 tbsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder

Instructions

  • In a food processor add chipotle pepper, 1/2 cup of cilantro, 1/2 tsp kosher salt, 1 tbsp lime juice, lime zest, 2 garlic cloves, and 1 tbsp olive oil; pulse until smooth
  • Place shrimp into a storage container and cover with marinade; set in fridge until needed 
  • In a large pot over medium heat, add remaining olive oil, followed by minced garlic, red onion, scallion, and red pepper
  • Saute vegetables until tender and add corn and black beans, remaining salt, cumin, garlic powder and onion powder and mix well
  • Add corn, black beans, green chiles and mix well
  • Pour in water, stock, half and half, cream cheese, and shredded cheese and stir until smooth and creamy
  • Add shrimp with the chipotle marinade and give a good stir
  • Allow shrimp to cook through; about 10 minutes and it's done
  • Serve with jalapeno sliced if desired

Notes

For the stock, you may use chicken, vegetable, or seafood. I personally use clam juice since it's a seafood dish.
