Ingredients

  • 3 c butternut squash diced into cubes
  • 1/2 c parmesan cheese grated
  • 4 strips bacon diced
  • 1/2 c white onion diced
  • 4 cloves garlic
  • 1 tbsp olive oil optional
  • salt and pepper to taste

Instructions

  • Peel and remove seeds from the squash and cut into 1/2 inch cubes.
  • Put a large skillet over medium heat and add the oil if using it. Add the bacon and cook until crispy, remove from the pan and set aside. Retain the drippings.
  • To the drippings, add onion and garlic and sautee for 3-4 min until the onion softens.
  • Add squash and coat well with the onions and oil. Cover the skillet with a lid and allow to cook for 5-6 min. Remove lid and stir with a spatula to keep it from burning. Return the lid for an additional 5 min.
  • The squash should be tender and slightly brown on the bottom. Give it another good toss and a few minutes to finish cooking it necessary. 
  • Remove from the heat and sprinkle parmesan cheese and bacon over the top to serve.
