Parmesan Bacon Butternut Squash
Give your dinner plate new life with this yummy garlicky parmesan bacon butternut squash. A quick side dish, sure to become your next favorite comfort food.

- 3 c butternut squash diced into cubes
- 1/2 c parmesan cheese grated
- 4 strips bacon diced
- 1/2 c white onion diced
- 4 cloves garlic
- 1 tbsp olive oil optional
- salt and pepper to taste
Peel and remove seeds from the squash and cut into 1/2 inch cubes.
Put a large skillet over medium heat and add the oil if using it. Add the bacon and cook until crispy, remove from the pan and set aside. Retain the drippings.
To the drippings, add onion and garlic and sautee for 3-4 min until the onion softens.
Add squash and coat well with the onions and oil. Cover the skillet with a lid and allow to cook for 5-6 min. Remove lid and stir with a spatula to keep it from burning. Return the lid for an additional 5 min.
The squash should be tender and slightly brown on the bottom. Give it another good toss and a few minutes to finish cooking it necessary.
Remove from the heat and sprinkle parmesan cheese and bacon over the top to serve.
