Ingredients

  • 1 1/12 c yellow mustard
  • 2/3 c white vinegar
  • 1 c brown sugar
  • 1/2 c white sugar
  • 1/4 c molasses
  • 1/4 c onion grated
  • 1 tbsp olive oil
  • 2 tbsp worcestershire sauce
  • 2 tsp kosher salt
  • 1 tsp crack black pepper
  • 1 tsp paprika
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp mustard powder
  • 1/2 tsp cayenne pepper

Instructions

  • In a large saucepan warm olive oil over low heat. Add onion and saute for 15 min. Stir consistently, adding 1 tsp of salt halfway through. Be sure not to crisp onion. It should be cooked down into a soft mash.
  • Add both sugars and molasses. Stir well and allow to melt down then add vinegar and remaining salt. Stir well.
  • Follow by adding mustard, worcestershire sauce, and all of the spices. Whisk to blend spices and allow to simmer for another hour. 
  • Remove from heat and serve as desired.
