Simple Greek Salsa

This simple Greek salsa is perfect for serving with homemade pita chips or over grilled chicken or some bomb lamb tacos! You must add this healthy dish to your summer menu.

Ingredients

  • 2 c roma tomatoes diced
  • 1 c cucumber diced
  • 1/2 c red onion finely diced
  • 1/4 c fresh parsley minced
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 tbsp olive oil optional
  • 1/4 tsp kosher salt

Instructions

  • Add all of the ingredients in a bowl and toss well. Refrigerate until your ready to enjoy!

Notes

Additional add-ins could include, olives, peppers, and feta!
