In a large mixing bowl sift the flour, sugar, baking powder, and salt. Add the canola oil, evaporated milk, and vanilla. Beat with a whisk or fork until smooth. Allow the batter to sit for 5 minute while the waffle iron is heating.
Scoop 1/2 cup of batter on to cooking sprayed waffle iron. Cook according to factory instruction. Serve immediately with desired toppings.
This recipe will yield 4-5 8 inch waffles. I have an older model Oster waffle iron.
