  • 1 1/4 c self-rising cornmeal
  • 1 c all-purpose flour
  • 1 c sweet potato mashed
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp salt
  • 1 c whole milk
  • 1/2 c butter melted
  • 1 egg
  • 1/2 c brown sugar
  • 1 tsp vanilla


  • Use a large mixing bowl to blend the cornmeal, flour, baking powder, baking soda, and salt then set aside. In a separate bowl, beat the mashed sweet potato, egg, butter, vanilla, and brown sugar in a separate bowl.
  • Pour the sweet potato mixture into the flour. Stir in most of the way then add the milk. Beat until smooth. Pour the batter into a 9x13 baking dish or cast-iron skillet. Bake in a 375 degree preheated oven for 25-30 minutes or until the center has set.
