Brown sugar sweet potato cornbread is worthy of any southern plate. It’s tender with the perfect amount of sweet. Spread on some maple butter and it’s pure bliss.

1 1/4cself-rising cornmeal
Use a large mixing bowl to blend the cornmeal, flour, baking powder, baking soda, and salt then set aside. In a separate bowl, beat the mashed sweet potato, egg, butter, vanilla, and brown sugar in a separate bowl.
Pour the sweet potato mixture into the flour. Stir in most of the way then add the milk. Beat until smooth. Pour the batter into a 9x13 baking dish or cast-iron skillet. Bake in a 375 degree preheated oven for 25-30 minutes or until the center has set.
