Ingredients
2 1/2call-purpose flourmore for rolling
1pkinstant yeast
1/2tspsalt
1egg
1/2cwater
1/3cyogurt
1/4colive oil
Instructions
Stir together 2 1/2 cups of flour, salt, and instant yeast. In a separate smaller bowl, beat the egg, yogurt, and olive oil until creamy and the egg is fully incorporated.
Make a hole in the flour and pour both the water and egg mixture. Using a wooden spoon or dough hooks on a mixer, work to form a soft dough. If the dough is still too soft, add the remaining flour by the tablespoon as needed.
Scoop the dough onto a floured surface to knead for a few minutes into a ball. The dough should be soft and smooth. Place the ball into an oiled bowl to rise for 20-30 min. Once risen, punch it down and divide the dough into 8 pieces of equal size. Shape into balls then cover with plastic wrap until ready to roll into discs.
Heat a generously oiled cast-iron skillet over med-high heat. Roll each piece into 6-inch circles just before cooking. Add pieces one at a time turning once you notice large bubbles. Remove when it's golden brown with small spots of char. Serve warm with garlic-butter (see post for recipe).
