Ingredients
1loaf brioche breadcut into 1/2”- 1” cubes
6large eggs
1 1/4cwhole milk
1/2cdark brown sugar
2tbspcinnamon
2tspvanilla extract
2cfresh peachespeeled and sliced
1/4cwhite sugar
3/4tspginger powder
Streusel
6tbspunsalted butter
1/4cwhite sugar
1/4cbrown sugarpacked
1/2cflour
Instructions
Preheat the oven to 350 degrees. In a bowl, whisk together the eggs, milk, cinnamon, and brown sugar; set aside. To a separate bowl add the peaches with the white sugar and ginger and toss well.
Add the bread cubes to the baking dish. Cover with the egg liquid then layer the peaches. Let it rest in the fridge for a minimum of 2 hours, or overnight.
When ready to bake, make the streusel by cutting the butter into the flour and sugars using a pastry cutter or forks to form crumbs. Top the casserole liberally with the streusel.
Bake at 350 for 40 minutes. Turn off the oven and let the casserole sit for 15-20 additional minutes before removing it. The top should until golden brown and the center set firm. Cut into 12 equal squares to serve.
