Ingredients
2 1/2lbbutternut squash1-2 in chunks
2ozbacon
1/2cred pepperfinely diced
1/2cyellow onionfinely diced
4clovesgarlicsliced thin
1tspkosher salt
1tspgarlic powder
1/2tspdried thyme
Instructions
Preheat the oven to 425. In a large cast-iron or oven-safe skillet cook the bacon strips on the stovetop until crisp. Drain the cooked bacon on a paper towel and save for later.
Turn off the flame, then to the skillet with the bacon fat, toss the squash, onion, red pepper, garlic, and spices together. Place the skillet into the oven for 25-30 minutes; until the squash is fork-tender. Top the squash with the bacon chopped into pieces.

This recipe was up dated on 11/15/2019. The original title is Parmesan Bacon Butternut Squash. I have removed the parmesan from the recipe but it is still a delicious addition if you want to try it. GAdding goat cheese tastes excellent as well. Original recipe published 12/17/2017
