Sesame Ginger Slaw is a refreshing Asian-inspired salad with a sweet sesame ginger dressing. Serve it with your favorite main dish for a vibrant delicious side.
1/2large red peppersliced thinly
5tbspseasoned rice vinegar
1tbspginger finely minced
2tbspavocado oilor neutral oil
2whole scallionsthinly sliced
salt to taste
Make the dressing by adding grated ginger, garlic, rice vinegar, soy sauce, sugar, sesame oil, and another neutral oil to a food processor. Bring until the garlic and ginger are fully incorporated. Pour the contents into a jar and add the scallion and sesame seeds. Place the lid and shake. Season with salt to taste.
To a large bowl, add the cabbage, carrot, red peppers, and cilantro. Pour the dressing over the veggies and toss well. Serve immediately or refrigerate.
Alternately, start with the ginger and garlic already grated to eliminate the need for the food processor. Simply place the ingredients in the jar, place the lid and shake vigorously for 2-3 minutes.
