Once the dough is made, pre-heat the oven to 250 degrees. Place a pan of hot water onto the bottom floor of the oven for moisture. Once the temperature is achieved, turn off the oven.
Roll the dough into 24 uniform balls (12 for half recipe) and arrange them in a baking dish. Cover the baking dish with a damp towel and place it into the oven on the middle rack for 20-22 minutes to double in size.
After the dough has risen, remove it from the oven and brush the rolls with melted butter. Turn the oven to 350-degrees and return the rolls to bake for 22-25 minutes; no need to pre-heat the oven at this point. The internal temperature should read 190 degrees when done. Remove the rolls and brush with more melted butter.
