Preheat the oven to 425°. Layer the fries in a cast-iron skillet. Crisp the fries for 24 minutes. Once the fries are done, drop the heat to 400°.
In a mixing bowl, beat the eggs, sour cream, milk, onion, and chives. Mixing the shredded cheese then season with salt and pepper. Top the crisp fries with the chopped bacon followed by the egg mixture.
Bake at 400° for 15-18 minutes or until the egg is fully set. Serve with more sour cream, chives, and grape tomatoes.
