Loaded French Fry Breakfast Casserole — bacon, cheddar, creamy sour cream and chive eggs, and crispy French fries baked into an incredible casserole.
Imagine a perfectly fluffy baked potato topped with bacon, cheddar, chives, and sour cream. Now imagine if that fluffy potato crispy on the outside and baked into a convenient breakfast casserole. This Loaded French Fry Breakfast Casserole is all of that. Instead of a regular potato, I’m using Grown In Idaho Super Crispy Shoestring Fries. Grown In Idaho Super Crispy Shoestring Fries– The crispy outside and tender inside make them perfect to withstand the creamy baked eggs.
Eggs
Milk
Sour cream– Sour cream adds more richness to the eggs than milk alone. It also adds to the taste complimenting the fries and cheese.
Chives– The chives add an herby onion flavor that is different from the white onion. I highly recommend using them.

Cheddar cheese– I’m using a cheddar jack blend but you can use any cheese that you prefer.

How to make cheesy bacon French fry casserole
Start by preparing the fries using a cast-iron skillet. I like using cast iron in the oven for even heat distribution. Preheat the oven to 425° and crisp the fries for 18-20 minutes or until crispy, stirring halfway through to ensure maximum crispiness. (Alternatively, you can place them into an air fryer for 10-12 minutes at 360°. )
Grown In Idaho Super Crispy Shoestring Fries will remain firm as the casserole bakes. You can also prepare your bacon in the oven while the fries cook. Remove the slices at around 20 minutes.
While the French fries bake, beat the eggs with the white onion, chives, cheese, sour cream, milk, salt, and pepper.
Remove the skillet and drop the temperature to 400°. Top the fries with the chopped bacon.
Pour the egg mixture over the fries and bake at 400° for 15-18 minutes.
Allow the casserole to cool for 5 minutes before serving.
Serving suggestions
Serve the casserole with a dollop of sour cream, a sprinkling of chives, and fresh sliced tomatoes. I also recommend serving them with a batch of Flaky Southern Biscuits or Cheddar Drop Biscuits.

Loaded French Fry Breakfast Casserole
Ingredients
- 1/2 pk Grown In Idaho Super Crispy Shoestring Fries
- 8 oz cook bacon chopped
- 1/2 c cheddar jack cheese grated
- 9 eggs
- 1/3 c whole milk
- 1/3 c sour cream + more to serve
- 1/3 c white onion diced
- 2 tbsp chives snipped + more for serving
- 1/4 tsp salt or to taste
- 1/4 tsp black pepper
- 10 grape tomatoes halved; optional
Instructions
- Preheat the oven to 425°. Layer the fries in a cast-iron skillet. Crisp the fries for 24 minutes. Once the fries are done, drop the heat to 400°.
- In a mixing bowl, beat the eggs, sour cream, milk, onion, and chives. Mixing the shredded cheese then season with salt and pepper. Top the crisp fries with the chopped bacon followed by the egg mixture.
- Bake at 400° for 15-18 minutes or until the egg is fully set. Serve with more sour cream, chives, and grape tomatoes.
