Bring to boil a pot with 2-3 cups of water with the kosher salt over medium heat. Submerged the potato wedges in the water to carefully then turn the heat to simmer for 6-7 minutes. Turn off the heat and immediately run the pot of potatoes under cold water until the potatoes cool down.
Let the potatoes dry and completely cool on paper towels over a baking sheet. Once cooled, remove the paper towels and lightly spray both sides of the wedges with the canola oil spray. Follow with the all-purpose seasoning.
Layer the fries onto the trays and load them into the air fryer. Set the fryer to the Fry setting and bake for 12 minutes. The fries will be crisp and golden brown.
