Chili infused honey can take any dish to the next level of sweet and heat. One golden drizzle can completely transform a recipe with little effort. For this infused honey recipe I chose fresh habanero peppers because it has about as much heat as I can handle and the lest overpowering taste. Habaneros have a nice fruity flavor that blends right into the honey but you can use any chili pepper that you’d like.
Should you use fresh chilies or dried chilies to infuse honey?
Either fresh or dried chili will infuse the honey nicely. The main consideration then becomes how the honey will be stored once it’s infused.
How do you store infused honey?
Honey is virtually a non-perishable product; meaning it can stay unrefrigerated after opening. The same is true for dried peppers. Combining the two will allow for shelf storage. On the other hand fresh chili peppers being perishable poses the problem of bacteria and will therefore need to be refrigerated even if the peppers are removed from the honey.
Can you infused honey without cooking it?
The preparation method I chose was simply to seep the habanero slices in the honey for a couple of days in the fridge before removing them. I sometimes keep the peppers in as well. However, some people choose to infuse their honey by heating it with the peppers. This helps to infuse the honey much quicker. You can read more about heating methods in this article.

- 1 c honey
- 2 habanero peppers sliced
- In a clean jar, add the honey and pepper slices. Place in the fridge for a few hours but overnight releases the most heat. Strain peppers and use the honey as desired.
