Fire-roasted tomatoes (from a can), fresh lime juice, fresh cilantro, and some heat from a jalapeño creates some awesome flavor in no time at all. I like to make this salsa with homemade baked tortilla chips for a healthy snack. The beauty of this recipe is that you can make it to the consistency you desire. I like mine a little chunky so I blend it I layers. If you are looking for the saucier restaurant-style you can blend it a little longer until it’s as smooth as you like.

Fire-roasted tomatoes– I use canned tomatoes to makes this an easier recipe.
Jalapeño– Half of a large jalapeño gives a nice amount of heat. If you can’t handle the heat just adjust it to your tolerance.
White onion– White onion has a stronger bite than other onions so it’s my preference for salsas but any onion will do really.
Cilantro– Typically, I just grab a handful of leaves with a little stem attached but I estimate it to be about 1/3 of a cup. You can add more or less to your taste.
Lime juice– Fresh is best but if you only have bottled it works well.
Salt to taste

In a food processor or blender, add the jalapeño, cilantro, and white onion. Pulse a few times to chop the contents.

Next, add the drained tomatoes, lime juice, and salt. Pulse until desired consistency is reached. Serve with immediately with chips.
