You are only five ingredients away from the absolute best Cilantro Lime Rice you will ever make. It’s easy and fresh. My secret is fresh lime juice, dried coriander, and fresh cilantro leaves. The dried coriander boosts the cilantro flavor during cooking.

What you need to make cilantro lime rice

Long grain rice
Limes
Cilantro
Coriander
Cumin
Salt
Water

I’m using quick cook Jasmine rice. Jasmine rice is my preference because it’s fragrant and tender when cooked. Quick cooking rice is a time save but you can use any kind of rice you prefer.

How to make cilantro lime rice in the microwave

I like to make rice in the microwave most of the time. It’s helps me personally when I’ve got name pots of the burner to save space and to prevent burning.

Using a microwave-safe bowl, add quick long-grain rice, lime juice, kosher salt, and dried coriander. Cover with water and microwave on high according to package directions. Stir in the cilantro leaves before serving.

Stovetop method

In a skillet or pot, add the rice, lime juices, salt, and dried coriander. Stir in the water and turn the flame to medium. Bring the pot to a boil then turn the flame to low. Cover the pan to cook for 15 minutes or according to the package directions. Fluff the rice and stir in the cilantro leaves.

Cilantro Lime Rice

Ingredients

  • 1 c long grain rice I use quick cook jasmine rice
  • 2 c water
  • 2 tbsp lime juice
  • 1 handful cilantro leaves
  • 1 tsp coriander
  • 1 tsp kosher salt

Instructions

Microwave

  • Add dry uncooked rice, lime juice, coriander, and salt to a microwave-safe dish. Pour in the water and cook rice according to package directions; bout 17 minutes. Remove the dish from the microwave and stir in the cilantro leaves.

Stovetop

  • In a skillet or pot, add the rice, lime juices, salt, and dried coriander. Stir in the water and turn the flame to medium. Bring the pot to a boil then turn the flame to low. Cover the pan to cook for 15 minutes or according to the package directions. Fluff the rice and stir in the cilantro leaves.
