Burrito bowls from Chipotle is the first thing that comes to mind when I think of cilantro lime rice. I love their food. I really do but I don’t taste cilantro or lime in their rice. That’s not the case with this recipe. You can taste both cilantro and lime without either overpowering.
My secret is fresh lime juice and dried coriander along with fresh cilantro. The dried coriander boosts the cilantro flavor without having to add a ton of fresh leaves.
Make Cilantro Lime Rice
I make mine in the microwave. Of course it can be made on the stove top but the microwave make this recipe even easier.
Using a microwave safe bowl, add quick long grain rice, lime juice, kosher salt, dried coriander, and a handful of fresh cilantro leaves. Cover with water and microwave on high according to package directions.
Garnish with more fresh cilantro.

Cilantro Lime Rice
- 1 c long grain rice I use quick cook jasmine rice
- 2 c water
- 2 tbsp lime juice
- 2 tbsp cilantro minced
- 1 tsp coriander
- 1 tsp kosher salt
- Add dry uncooked rice, lime juice, coriander, and salt to a microwave safe dish. Pour in the water and cook rice according to package directions. About 15-17 minutes.
