Classic southern dessert meets breakfast favorite. This quick bake Peach Cobbler French Toast is what brunch was made for. It has layers of sweetened fresh peaches tossed with a touch of ginger layered on top of cubed buttery brioche bread and topped with a brown sugar streusel. The brown sugar egg custard bakes this decadent casserole into something fit for dessert. It’s one of those dishes that you’ll want to have on hand for special occasions.

Yellow peaches
Eggs
Milk

Use fresh peaches if you have them but this recipe can be made using frozen peaches. Be sure to peel the fresh ones before slicing. You want a peach that is softening but still have firmness. This is an excellent recipe to is aging peaches as the top is covered with streusel.

Unlike most French toast casseroles, this one doesn’t have to soak for hours or overnight. Using a 9×13 baking dish helps the casserole to cook evenly and quicker. Smaller bread cubes also assist with the absorption of the egg batter so the casserole doesn’t need to soaking time.

How to make a peach cobbler French toast casserole

In a bowl, whisk together the eggs, milk, cinnamon, and brown sugar and set aside.

To a separate bowl, add the peaches with the granulated sugar and ginger and toss well.

Make the streusel by cutting the butter into the flour and sugars using a pastry cutter or forks. Set it aside.

Add the bread cubes to the baking dish. Cover with the egg liquid, then evenly layer the peaches. Top the casserole liberally with the streusel. Bake at 350 degrees for 45-55 minutes.

How to store and reheat leftover French toast casserole

Store the leftover casserole completely cooled in an air tight container in the fridge for 3-4 days. To reheat it, preheat the oven to 375 and heat the French toast sliced on a baking sheets for 8-10 minutes. Keep a close eye.

Ingredients

  • 1 loaf brioche bread cut into 1/2”- 1” cubes
  • 6 large eggs
  • 1 1/4 c whole milk
  • 1/2 c dark brown sugar
  • 2 tbsp cinnamon
  • 2 tsp vanilla extract
  • 2 c fresh peaches peeled and sliced
  • 1/4 c white sugar
  • 3/4 tsp ginger powder

Streusel

  • 6 tbsp unsalted butter
  • 1/4 c white sugar
  • 1/4 c brown sugar packed
  • 1/2 c flour

Instructions

  • Preheat the oven to 350 degrees. In a bowl, whisk together the eggs, milk, cinnamon, and brown sugar; set aside. To a separate bowl add the peaches with the white sugar and ginger and toss well.
  • Add the bread cubes to the baking dish. Cover with the egg liquid then layer the peaches. Let it rest in the fridge for a minimum of 2 hours, or overnight.
  • When ready to bake, make the streusel by cutting the butter into the flour and sugars using a pastry cutter or forks to form crumbs. Top the casserole liberally with the streusel.
  • Bake at 350 for 40 minutes. Turn off the oven and let the casserole sit for 15-20 additional minutes before removing it. The top should until golden brown and the center set firm. Cut into 12 equal squares to serve.
